DAG 2010 Recommendation

Hi,

Can anyone help me find out what is the best recommendation for DAG DB that will support 2000 users?

I know that MS is recommending DB at 2TB size, but taking into consideration that at crisis time, running eseutil on 2TB is almost impossible, or at least will take me hours.

I need to find out what is the best\optimal configuration, how many Mailbox servers should I deploy, amount and recommended size for each DB.
