Outlook Connecting To Old Mail Server After Roaming Profile Deletion

We recently moved to a new Exchange 2010 environment and all our mailboxes have been moved from the old servers to the new servers.  Just the other day I turned off the old mail servers, Exchange 2007 is still on them, I just turned them off to make sure everything would function properly without them being on.

Now that they're turned off if we delete a users roaming profile (and local cache of the profile on their desktop computer) and have them login and launch Outlook (2010) it will sit at the splash screen with the Getting Account Information (that might not be the exact message) message and it eventually fails with an error and then it will open the mail profile settings box and in that box will be the old mail server. If I change it to point to the cas array it launches Outlook and everything works just fine.  With the user logged in and working if I close Outlook and remove the mail profile, then launch Outlook put in a generic name (Outlook) for the profile it takes a while but Outlook will eventually load properly. So it only seems to not be able to resolve to the new cas array when the entire roaming profile is deleted.

If I open the Test E-mail AutoConfiguration with that test user after Outlook is working and I look at the Log tab I can see it trying to connect to the Autodiscover of the old mail servers (which I'm assuming is why it took so long to load Outlook after just deleting the mail profile) and eventually trying a new cas server and succeding. I posted a snippet of the log below, there are two other attempts and failures that I didn't paste.

If I turn on the old mail server and delete the users roaming profile and then have them login and launch Outlook it open quickly without an issue.  So my question is basically why when I delete the users roaming profile will Outlook not properly connect to the new cas servers, but instead try connecting to the old server.  Sorry about the long post, but there was a lot of information I had to include.
