Exchange 2010 SP2 with a 3-server load-balanced CAS array and 4 DAG-enabled mailbox servers.

We are migrating users from Exchange 2007 to Exchange 2010. This only occurs after users have been moved to Exchange 2010.
This issue is affecting about 10% of our Exchange 2010 user population. All affected clients are fully patched Outlook 2010 clients configured in Cached mode.
When the user attempts to add or remove addresses in the message composition window, Outlook stalls. The user gets the warning "Outlook is trying to retrieve data from casarray.company.com".
After a variable amount of time, usually at least a full minute, the request either finishes or times out, and the user is permitted to continue addressing the message without issue.
If, upon seeing this warning message, the user right-clicks on the warning pop-up and clicks "cancel server request" they are able to continue addressing the message as well.
In some cases, disabling autocomplete helps eliminate the issue, but this is not a desirable solution, as we want to retain this capability for our users.
I've tried disabling all Outlook add-ins, but that did not help.
Our antivirus solution does not scan email at the client level.
I'm beginning to thing this is an issue with the one or more of the Client Access Servers in the array, but I really don't see anything specific in the event logs or in the key Perfmon counters.
I'm wondering if anyone has any recommendations on how or where I should start in my search for an answer. Are there any diagnistic tools I should run, system events I should be looking for, or performance counters I should monitor that might give me some insight as to what the source of this problem may be?
