Exchange 2010 SP3 Best Practice

I'm getting ready to upgrade our organization from Exchange 2010 to 2013.  The first step is to get all Exchange 2013 machines to SP3, if I'm not mistaken.  And installing SP3 requires redoing the Edge Subscription.

My question then is how to get this done with minimal downtime. 

Right now we have three Exchange servers - an Edge Server (edge1), a server running Mailbox, Transport and Client Access roles (exch1), and a server running just mailbox and client access roles (exch2).

I'm assuming that running SP3 on both edge1 and exch1 simultaneously, then redoing the Edge Subscription, will result in a couple hours downtime where no e-mail can go in or out of the organization?  I was thinking maybe installing the Transport Role on exch2, then installing SP3 on that, then installing SP3 on the Edge Server, then creating an Edge Subscription from exch2.

Thoughts?
