Removing Exchange 2010 out of 3 exhcange 2010 servers

Before I joined my current company there already was Exchange 2010 (all roles on one server) running on windows 2008 R2 standard.

Then last year we added 2 more servers into the mix as Windows 2008 R2 Enterprise with Exchange 2010 (all roles installed on each server) and setup as DAG.

Now I want to remove the original old Exchange 2010. What are my steps?

My current setup as of now:

1. Autodiscover.xyzcompnay.com points to old exchange 2010 (which I will call oldexchange01)

2. PRT records created for all three exchange servers (oldexchange01, newexchange02 & newexchange03)

3. All mailboxes have been moved to new exchange 2010 servers including discovery. (although from research I cannot find arbitration mailbox. Don’t know what that
is).

4. Majority of outlook clients (not all) point to new CAS server on new exchange servers

5. No Public folders exist

6. OAB shows it is setup on old exchange 2010 server

7. I'm not sure why, but I have 3 send connectors. One for each new server (example:Internet Send connector oldexchange01, Internet Send connector newexchange02, & Internet Send connector newexchange03) . When I click on properties for each send connector the FQDN shows the respective mx records. for example for oldexchange01 it shows mx2.xyzcompany.com, newexchang02: mx2.xyzcompany.com and for newexchange03: mail.xyzcompany.com

8. I also have 3 Receive connectors. Not sure why

So my question is, how can I completely remove oldexchange01 (old exchange 2010) out of the mix and only leave our new 2 servers
